Smoked Sausage and Saucy Beans
Prep Time: 15 minutes
Cook Time: 1 1/4 to 1 1/2 hours or until bacon is cooked.

|1||pound Cloverdale ring sausage, cut into 1-inch chunks|
|2 (15 ounces)||cans great northern beans, drained and rinsed|
|1/2||cup firmly packed light brown sugar|
|1/2||cup chopped onion|
|2||tablespoons mild molasses|
|1||tablespoon honey mustard or Dijon mustard|
|2||slices Cloverdale Hickory smoked bacon|
Heat the oven to 350 degrees F. Combine the beans, ketchup, brown sugar, onion, molasses, mustard and pepper in a large bowl. Stir gently to mix.
Stir in sausage. Pour mixture into a 2-quart casserole. Lay bacon across the top.
Bake 1 1/4 hours to 1 1/2 hours or until bacon is cooked. Add a little water if beans become too dry.
